We start it when you order and hand it over once it is established and hardened off. That is what makes the olla work from day one: the roots have already grown down to it before it reaches you.

Water it through the olla. That is the only instruction.

A buried terracotta olla releases water at exactly the rate the soil draws it, over a base of well-rotted wood that holds moisture through a hot week. You cannot overwater it and it will not dry out on you. The roots reach the olla before the plant leaves us, so it works from the day it arrives.

Details

A long red type rather than the blocky green sold as capsicum. Left to ripen fully it turns deep red and sweet, and it is thick-walled enough to roast properly.

The fussiest plant we sell. It wants cool nights, which is why it is a Rabi crop here — transplanted in October and cropping through the Bengaluru winter. Planted in April it will flower and drop everything.

Afternoon shade genuinely helps. A terrace that bakes from noon will scald the fruit; thirty percent shade net or a spot that loses the sun by two o clock produces better peppers than full exposure.

Stake it. The fruit is heavy enough to split the main stem at the fork, which ends the plant.
