We start it when you order and hand it over once it is established and hardened off. That is what makes the olla work from day one: the roots have already grown down to it before it reaches you.

A buried terracotta olla releases water at exactly the rate the soil draws it, over a base of well-rotted wood that holds moisture through a hot week. You cannot overwater it and it will not dry out on you. The roots reach the olla before the plant leaves us, so it works from the day it arrives.

The Karnataka chilli that gives colour rather than heat. Grown for the wrinkled dark red pods that go into a proper huli pudi or bisi bele bath powder — the reason a dish looks red without being punishing to eat.
This is a long crop. Green pods from around ten weeks, but the point of Byadgi is the dried pod, and that is a four-month plant. Leave the fruit on until it is deep red and starting to wrinkle, then dry it on a raised rack rather than on the ground.
It arrives in a filled 12 x 18 inch bag, which is more root run than a chilli strictly needs. The plant stands in it for four months, and that extra soil volume is what carries it through to a full dried harvest instead of stalling in February.
The one thing that kills it is leaf curl virus, carried by whitefly. Keep it away from any cucumber or gourd, which is where whitefly builds up. If leaves cup and crinkle at the growing tip, remove the plant — there is no cure and it becomes a source for everything nearby.
