We start it when you order and hand it over once it is established and hardened off. That is what makes the olla work from day one: the roots have already grown down to it before it reaches you.

A buried terracotta olla releases water at exactly the rate the soil draws it, over a base of well-rotted wood that holds moisture through a hot week. You cannot overwater it and it will not dry out on you. The roots reach the olla before the plant leaves us, so it works from the day it arrives.
Details
Deep wine-coloured small fruit, sweet rather than sour, and thin-skinned. It is an eating tomato — for salads, for a chutney, for picking off the plant — not the sour type you break down into rasam.
It needs staking by week three. One bamboo cane and a soft tie; left to sprawl the fruit sits on wet soil and splits. Pinch off the side shoots in the leaf joints for fewer but better fruit.
First pick lands ten to twelve weeks after delivery, then it runs steadily for about two months. The filled 12 x 18 inch bag holds moisture through a hot afternoon, which is what lets it carry that much fruit without exhausting itself. Feed with diluted compost tea once flowering starts.
